Here is the first in a series of family friendly recipes, brought to you in association with Truly Madly Healthy.

PREPARATION TIME: 5 minutes

COOKING TIME: 2 minutes

SERVES: 2

  • 1 Banana
  • 1 tbsp of coconut oil
  • 1 tsp of cinnamon
  • 60 g porridge oats ( if possible go for Gluten free oats)
  • 1 egg

In a bowl mash the banana, then add the egg, cinnamon, and in a blender whisk the porridge oats until they are more like a flour consistency. Add the oats to the bowl and mix thoroughly. Heat the coconut oil in a pan over a medium heat then add a spoonful of the pancake mix into the pan. Allow to cook for approx 1 minute then flip over. If you wish you could sprinkle some seeds on top.
