A no junk favourite for all the family.
Serves 2 adults and 2 children

- 3 slices of wholemeal bread (slightly stale bread is perfect)
- A pinch of ground black pepper
- Zest of a lemon
- 4 chicken breasts
- 4 heaped tbsps plain flour
- 2 eggs
How do you make it?
Step 1 – Pre-heat your oven to 200°C / 180°C fan / gas mark 6.
Step 2 – Whizz the bread into breadcrumbs in a food processor then tip onto a plate and add black pepper and lemon zest (if you don’t have a food processor you can create breadcrumbs by rubbing each slice through a fine sieve). Whisk your eggs together in a bowl.
Step 3 – Cut the chicken into strips (goujons).
Step 4 – Place the flour on a plate and dip the chicken in the flour, then into the whisked egg, then into the breadcrumbs to coat.
Step 5 – Place the bites onto a greased baking tray and bake for 25-30 minutes until golden and cooked through. Turn over half way through cooking.
These chicken bites go brilliantly with a zesty lemon dip. Simply mix a squeeze of lemon juice and a pinch of lemon zest into some Greek yogurt to taste. Serve with lemon dip and seasonal vegetables as a main meal, or as a light bite or finger food with just the dip.
