Anyone can be a star baker when they have a little dollop of knowledge and some delicious, foolproof recipes. To help your little ones learn some great skills in the kitchen, we’ve asked Libby Gordon, the owner of the Happy Kitchen Food Company, to share some of her best easy home baking recipes.

Libby is a Norland-trained nanny who is now running The Happy Kitchen Food Company providing home-cooked, healthy food as well as a bespoke children’s party catering service – with party boxes and platters.  Based in Essex, The Happy Kitchen Food Company also provides fun courses for adults and children based on teaching cooking essentials as well as developing some more challenging skills.

Skills that children learn through cookery are many and varied – just baking a loaf of bread will teach them a whole host of skills including:

1) Maths – counting out and weighing the ingredients – as well as sequencing and determining the order of events
2) Fine motor skills – through mixing, measuring, pouring and kneading
3) Cultural understanding – learning where food comes from and what different people in the world eat
4) Nutrition – healthy eating and understanding the food groups
5) Social skills – practising turn-taking and learning patience!

THE HAPPY KITCHEN FOOD COMPANY’S GREAT EASY HOME BAKING RECIPES

Recipe 1 – Easy Banana Bread

This is a really great way of using up those overripe bananas and this recipe has the bonus of being dairy-free.  It’s fun for children to prepare and the ones Libby has cooked in classes have been delicious, this is a simple recipe that the younger children always want to go home and cook for their families

Ingredients: 

  • 125mls of sunflower oil plus a little extra for greasing
  • 200g caster sugar
  • 1tsp of vanilla extract
  • 175g of plain flour
  • 1tsp of bicarbonate of soda
  • 1/2 tsp of ground cinnamon
  • 2 eggs, beaten
  • 3 small ripe bananas

Method:

  • Pre-heat the oven to 180 degrees
  • You will need a 2lb or 900g loaf tin
  • Grease and line the bottom of the tin with baking paper
  • Place all the ingredients in a large bowl and beat by hand
  • Spoon the mixture into the tin and level the top
  • Bake in the oven for approximately 1 hour until lightly golden on top and springy to the touch
  • Cool in the tin for 10 mins, then remove and put on a cooling rack
  • Cut into slices

Recipe 2 – Pesto and Ham Scones

This is an easy cheese scone recipe and the addition of a tablespoon of pesto and some chopped cooked ham jazzes it up a bit.  It’s practical for children aged 5 upwards and needs very little supervision.  It is very quick to prepare and bake – and delivers pretty instant gratification!

Ingredients:

  • 225g self-raising flour
  • Pinch of cayenne pepper
  • 1 tsp of baking powder
  • 55g butter
  • 100g cheddar cheese
  • 80mls milk
  • Extra cheese for topping the scones
  • 1 tablespoon of pesto
  • Handfuls chopped fresh basil
  • 3 slices of chopped cooked ham

Method:

  • Preheat the oven to 200 degrees
  • In a large bowl sift together the flour, cayenne pepper and baking powder
  • Cut the butter into cubes and then mix into the flour mixture until it resembles breadcrumbs
  • Sprinkle in the cheese, ham and basil and mix together
  • Make a well in the centre and pour in the milk and add the pesto and mix to a firm but still-soft dough, do not pour all the milk in at once as you may not need it all to get the right consistency
  • Lightly flour a surface and roll out the dough to approximately 2cms thick
  • Cut out the scones with a medium cutter, place on a baking tray and brush on a little milk. Then sprinkle on some cheese before putting in the oven
  • Bake for 10-15 mins or until golden brown and cooked through

Recipe 3 – Quick Soda Bread

This is the quickest bread to prepare with children as it doesn’t need time to prove so they get to eat it more quickly too!

Ingredients: 

  • 170g of self-raising flour (wholemeal)
  • 170g plain flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon bicarbonate of soda
  • 290ml buttermilk or normal milk with 3 teaspoons of lemon juice mixed in

 Method:

  • Pre-heat the oven to 200 degrees
  • Tip the flours, salt and bicarbonate into the bowl and stir
  • Make a well in the centre, pour in the buttermilk quickly with a large fork to form a dough
  • Turn out to a lightly floured surface and knead for 2 minutes; form into a ball, flatten the top slightly and place on a floured baking sheet
  • Cut a cross in the top and bake for 30mins until the bread sounds hollow when tapped on the bottom
  • Cool on a wire rack

 

Recipe 4 – Nutella Cookies

These delicious cookies are super easy, super quick and a super naughty treat, so to be enjoyed in moderation!

Ingredients:

  • 5 tablespoons of Nutella
  • 50g brown sugar and a little extra to sprinkle on top
  • 50g butter, softened
  • 1 egg (beaten)
  • 125g self-raising flour

Method:

  • Pre-heat oven to 180 degrees
  • Mix the Nutella, brown sugar and butter together
  • Gradually add the flour and keep mixing
  • Spoon into small piles on a baking sheet lined with greaseproof paper – space well apart
  • Bake for 10-15mins
