Here is the second in a series of family friendly recipes, brought to you in association with Menu4mums.

Ingredients

1 tbsp olive oil
1 onion, chopped
2 celery sticks, sliced
1 tsp ground coriander
1 clove garlic, crushed
2 carrots, sliced
1 med-large courgette, sliced
Small cauliflower, in florets
1 medium potato, cubed
400g can chopped tomatoes
2 tsp soy sauce
150ml water
75g Cheddar cheese, grated
Crusty bread to serve.

Method

  1. Heat the oil in a large flameproof casserole.  Add the onions and celery, and fry until softened.  Add the coriander and garlic and fry for 1 minute.  Add the remaining vegetables, the tinned tomatoes, soy sauce, water, and seasoning to taste.  Bring to the boil and stir well.  Cover and simmer for 30 mins until tender.
  2. Preheat the grill to medium.  Sprinkle with the cheese and grill until brown.  Serve immediately with crusty bread.
