Here is the second in a series of family friendly recipes, brought to you in association with Menu4mums.
- Heat the oil in a large flameproof casserole. Add the onions and celery, and fry until softened. Add the coriander and garlic and fry for 1 minute. Add the remaining vegetables, the tinned tomatoes, soy sauce, water, and seasoning to taste. Bring to the boil and stir well. Cover and simmer for 30 mins until tender.
- Preheat the grill to medium. Sprinkle with the cheese and grill until brown. Serve immediately with crusty bread.
